Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken
Provides the protein and meat that becomes tender during the long simmer.
Butter
Carries the curry powder's fat-soluble flavor and helps brown the onions.
Onions
Browning them builds sweetness and a savory base for the sauce.
Curry powder
Supplies the spice blend that gives the dish its characteristic aroma and flavor.
Tomatoes
Add acidity and moisture that help form the simmering sauce.
Milk
Adds richness and softens the sharpness of the spices and tomatoes.

The step that matters

Cooking the onions until browned. Onions that are only softened, not browned, leave the curry pale and less sweet. Browning caramelizes their sugars and builds the deep flavor the sauce depends on.

Swap the onion

How well each one fits the dish's main ingredients (chicken, butter, tomato, pepper, milk):
