Angel Cake

Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Sift the flour and baking powder together four times.

Make the batter

  1. Beat the egg whites until stiff peaks form.

  2. Gradually beat in the sugar and vanilla extract.

  3. Gently fold in the flour mixture until combined.

Bake and cool

  1. Pour the batter into an ungreased pan and bake at 300°F (150°C) for 40 minutes.

  2. Invert the pan to cool, placing something under the corner for air circulation.

  3. Once cool, cut the cake out of the pan.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Whipped into stiff peaks to trap air, giving the cake its light, airy structure.
Sugar
Sweetens the cake and helps stabilise the whipped egg white foam.
All-purpose flour
Provides the starch and gluten that set the cake's structure as it bakes.
Baking powder
Releases gas during baking to help the light cake rise.

The step that matters

Gently fold in the flour mixture. Folding gently keeps the air beaten into the egg whites. Stirring or deflating the batter causes a dense, flat cake.

Swap the vanilla

How well each one fits the dish's main ingredients (flour, egg, sugar):

  1. Raisinfits better
  2. Vanillathe original
  3. Lemonfits less well
  4. Figfits less well

Fit is the average pairing score against flour, egg, sugar. Candidates are from the same food group and used in at least 100 recipes.
