Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Granulated sugar
Forms the syrup that sets into the soft, sweet candy base.
Arrowroot
Thickens the syrup so it holds its shape when beaten and molded.
Bittersweet chocolate
Forms a rich, slightly bitter coating around the cream centers.

The step that matters

Boil until the syrup thickens. Boiling concentrates the sugar syrup. Stopping too early leaves it thin, so the cream will not set firmly enough to mold. Stirring constantly prevents scorching and crystallization on the pan bottom.
