Baked Soft-shell Crabs

Ingredients

Directions

The book says “a very hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the crabs

  1. Preheat the oven to 400°F (200°C).

  2. Season the crabs with coarse sea salt and black pepper.

  3. Dip the crabs in melted butter and coat them thickly with dry bread or cracker crumbs.

Bake and serve

  1. Place the crabs in a baking pan and bake for 10 to 12 minutes until tender.

  2. Remove the crabs to a platter.

  3. In the same baking pan, add a little water and 1 tablespoon of flour mixed to a smooth paste.

  4. Boil the gravy for 1 minute.

  5. Season the gravy with salt and pepper.

  6. Pour the gravy around the crabs.

  7. Strain the gravy if it is lumpy.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Soft-shell crabs
Provide the main protein, cooked until tender in the oven.
Dry bread or cracker crumbs
Form a crisp, browned coating that holds the crab's juices inside.
Melted butter
Adds fat that helps the crumb coating brown and gives richness.
Flour
Thickens the pan liquids into a smooth gravy.

The step that matters

Make the gravy smooth. Flour must be mixed to a smooth paste with water before it goes into the hot liquid, otherwise it forms lumps. Boiling for a full minute cooks out the raw flour taste and fully thickens the gravy.
