Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tomato
Provides the main body, acidity and flavour of the sauce.
Butter
Adds richness and fat, carrying flavour through the sauce.
Flour
Thickens the sauce as it cooks with the butter and tomato liquid.

The step that matters

Cooking the flour into the butter. Cooking the butter and flour for 2 minutes cooks out the raw starch taste before the tomato is added. Adding the strained tomato gradually while stirring prevents lumps, so the sauce thickens smoothly.
