Ingredients

Directions

Make the sauce

  1. Heat the butter in a pan until hot.

  2. Add the flour and stir until very brown.

  3. Gradually add the stock, removing the pan from direct heat.

  4. Once well combined, bring to a boil, then add the mushroom liquid, salt, and pepper.

  5. Simmer gently for 20 minutes, skimming off any oil that rises to the top.

  6. Add the mushrooms and simmer for an additional 5 minutes.

Serve

  1. Pour the sauce over beef and serve immediately.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Provides fat for the roux and adds rich flavor to the sauce.
Flour
Thickens the sauce as it cooks with the fat and liquid.
Stock
Forms the liquid base of the sauce.
French mushrooms
Add mushroom flavor and body to the finished sauce.

The step that matters

Gradually add the stock off the heat. Adding liquid slowly to the hot butter and flour mixture, away from direct heat, lets the starch disperse evenly. This helps prevent lumps forming in the sauce.
