What each ingredient does

Chopped beef
Provides the main protein that forms the body and savory flavor of the meatballs.
Bread crumbs
Absorb moisture and help keep the cakes tender rather than dense.
Egg
Binds the mixture together so the cakes hold their shape.
Milk
Moistens the bread crumbs so the mixture stays soft and can be formed.

The step that matters

Frying in very hot fat. Hot fat sears the outside quickly, browning the flour coating and sealing in juices. If the fat is not hot enough, the cakes absorb grease and cook unevenly.

Swap the celery

How well each one fits the dish's main ingredients (beef, bread, pepper, sage, butter, egg, parsley):

  1. Marjoramfits better

Fit is the average pairing score against beef, bread, pepper, sage, butter, egg, parsley. Candidates are from the same food group and used in at least 100 recipes.
