Mutton Stew

Ingredients

Directions

Prepare the mutton

  1. Trim the mutton of all fat and cut it into pieces the size of a teacup.

  2. Cover the mutton with hot water, place it on the fire, and let it simmer slowly, covered, for 30 minutes.

Stew the meat

  1. Add the salt pork and onion, season with salt and pepper, and stew until the meat is tender.

Make the gravy and serve

  1. Remove the meat with a skimmer and place it on a serving dish.

  2. Add the milk to the gravy in the kettle.

  3. When the gravy is hot, stir in the flour mixed with a little cold milk.

  4. Cook the gravy until well combined, taste, and adjust seasoning if necessary.

  5. Pour the gravy over the mutton and serve.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mutton shoulder
Provides the main meat, which becomes tender through slow simmering in liquid.
Salt pork
Adds fat and savoury flavour to the stewing liquid and the gravy.
Flour
Thickens the milk and gravy as it heats, giving a smooth body.
Milk
Adds richness and body to the gravy, mellowing its flavour.
Onion
Contributes sweetness and aroma to the stewing liquid as it cooks down.

The step that matters

Stirring in the flour mixture. Flour added directly to hot liquid clumps, so it must be mixed with cold milk first and stirred in while the gravy is hot. Cooking it afterward lets the starch swell fully and thicken the gravy smoothly.
