Why it works: Celery and pepper match in chemistry and in kitchens. They rank in the top 5% of all ingredient pairs, and cooks put them together in 16,012 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Celery Stuffing

Ingredients

Directions

  1. Chop the celery finely.

  2. Rub the butter into the bread crumbs.

  3. Add the chopped celery, eggs, salt, and pepper to the crumbs and mix well.

  4. Stuff the turkey with the mixture, including some in the breast.

  5. Sew the turkey securely.

  6. Wring a large square of cotton cloth out of cold water and dredge it thickly with flour.

  7. Wrap the turkey in the cloth and plunge it into boiling water.

  8. Boil for 20 minutes per pound, rapidly for the first 15 minutes, then reduce the heat but do not stop boiling.

  9. Once done, place the turkey on a platter, remove the cloth and skewers, and drain well.
