Why it works: Pepper and sage match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 5,388 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Roast Goose, with Potato Stuffing

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Clean the goose, cutting off the neck and preparing the breast for stuffing.

  2. Pare and boil the potatoes, then mash them finely.

  3. Add pepper, sage, salt, butter, and onion juice to the mashed potatoes.

Stuff and truss

  1. Fill the breast and body of the goose with the stuffing, laying it in lightly.

  2. Sew and truss the goose as you would for turkey.

  3. Sprinkle the outside with salt, pepper, and flour, then cover the breast with slices of fat salt pork.

Roast and serve

  1. Roast the goose in a 400°F (200°C) oven for 45 minutes.

  2. Remove the pork, baste the goose with the oil in the pan, and pour off excess oil if necessary.

  3. Baste every 15 minutes after the first 25-30 minutes of roasting.

  4. Boil the giblets and make gravy as directed, or use the alternative gravy method.

  5. Serve with apple sauce.

What each ingredient does

Goose
Fatty meat whose rendered fat keeps the bird moist and helps the skin crisp.
Potatoes
Mashed potatoes bind the stuffing and add moisture and body inside the bird.
Butter
Adds fat and richness to the stuffing, carrying flavor and moisture.
Onion juice
Adds savory aroma to the stuffing without leaving chunks of onion.
Fat salt pork
Renders fat over the breast, moistening the meat during the early roasting.

The step that matters

Pour off excess fat and baste on schedule. Goose releases a lot of fat as it roasts. Pouring off the excess keeps the skin from sitting in grease and steaming, so it can crisp. Regular basting keeps the surface moist and evenly browned.

Swap the sage

How well each one fits the dish's main ingredients (potato, pepper, butter, onion, pork):

  1. Garlicfits better
  2. Thymefits better
  3. Parsleyfits better
  4. Sagethe original

Fit is the average pairing score against potato, pepper, butter, onion, pork. Candidates are from the same food group and used in at least 100 recipes.
