What each ingredient does

Cabbage
Becomes tender and sweetens as it cooks, absorbing the savory flavor of the simmering beef.
Corned beef
Provides the main protein and savory, salty flavor that seasons the broth and cabbage.

The step that matters

Add the cabbage to the boiling corned beef 1 hour and 15 minutes before serving.. Cabbage cooked too long turns soft and releases sulfurous compounds that smell strong and taste bitter. Timing it late in the cook keeps it tender but still fresh-tasting.

Swap the cabbage

How well each one fits the dish's main ingredients (beef, pepper):

  1. Capsicumfits better
  2. Tomatofits better
  3. Carrotfits better
  4. Cabbagethe original

Fit is the average pairing score against beef, pepper. Candidates are from the same food group and used in at least 100 recipes.
