What each ingredient does

Cauliflower
Forms the bulk of the dish and becomes tender through boiling, giving it the main texture.
Butter
Melts with flour to form the roux that gives the sauce its body and richness.
Flour
Thickens the butter and milk into a smooth white sauce as its starch gelatinises.
Milk
Forms the liquid base of the sauce, which thickens as it heats and coats the cauliflower.
Grated cheese
Melts into the sauce and browns on top, adding flavour and a golden crust.
Bread crumbs
Forms a crisp, browned topping that contrasts with the soft layers beneath.

The step that matters

Cooking the flour into the butter and adding the milk gradually. Stirring flour into hot butter until frothy cooks out its raw taste, and adding milk slowly while stirring prevents lumps so the sauce thickens smoothly.
