Why it works: Cabbage and pepper are a kitchen classic. They rank in the top 5% of all ingredient pairs, and cooks put them together in 4,081 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Cabbage Salad

Ingredients

Directions

Prepare the cabbage

  1. Chop the cabbage finely and season with salt and pepper, avoiding seasoning in the dressing.

  2. If the cabbage is wilted, soak it in ice water for 1 hour before chopping.

  3. Heat the vinegar; if very strong, dilute it with water.

Make the dressing

  1. Beat the egg yolk well.

  2. Stir the corn starch into the milk and add the egg, mixing thoroughly.

  3. Gently add this mixture to the boiling vinegar; it will become a creamy dressing.

  4. Boil the dressing for 2 minutes, then remove from heat and pour it over the cabbage while still hot.

  5. Optionally, cool the dressing before pouring it over the cabbage.

Serve

  1. Set the salad in a cool place and serve when cold.

What each ingredient does

Egg yolk
Thickens the dressing and gives it a creamy, rich body as it sets.
Corn-starch
Thickens the milk and vinegar mixture into a smooth, glossy dressing.
Vinegar
Provides the sharp acidity that flavours the dressing and cuts the richness.
Milk
Adds moisture and mild richness, softening the dressing's sharpness.
Chopped cabbage
Forms the crisp, bulky body of the salad that the dressing coats.

The step that matters

Adding the egg mixture to the boiling vinegar. Egg proteins can scramble if added too quickly or to overly hot liquid. Adding gently while stirring keeps the dressing smooth and creamy, and the starch helps stabilise it during boiling.
