Cream Tapioca Pudding

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Soak the tapioca overnight in enough water or milk to cover it.

Make the pudding

  1. In the morning, place the soaked tapioca in a saucepan with the quart of milk and boil for 30 minutes.

  2. Beat the egg yolks, sugar, and coconut together, then add this mixture to the milk and boil for an additional 10 minutes.

  3. Stir in the salt and pour the mixture into a pudding dish.

Top and bake

  1. Beat the egg whites until stiff, add 2 teaspoons of sugar, and spread over the pudding.

  2. Sprinkle a thin layer of coconut on top and brown delicately in the oven at 350°F (175°C).

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Pearl tapioca
Swells and thickens the milk as it cooks, giving the pudding its body and chewy texture.
Eggs
Yolks thicken the custard when heated, and whites whipped into a meringue form the set, browned topping.
Milk
Forms the liquid base that the tapioca cooks in and that the egg yolks thicken into custard.
Sugar
Sweetens the pudding and the meringue topping.
Prepared coconut
Adds coconut flavour to the pudding and a toasted, aromatic topping.

The step that matters

Adding the egg yolk mixture to the hot milk. Egg yolks thicken through gentle heat, but they can curdle or turn grainy if they meet boiling liquid too abruptly. Stirring constantly while adding them keeps the custard smooth.
