Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Creamed with sugar to add richness and a smooth body to the sauce.
Sugar
Creamed with butter for sweetness and to help give the sauce its texture.
Egg
Beaten in to thicken the sauce slightly and bind it into a smooth emulsion.
Wine
Adds acidity and flavour, balancing the sweetness of the sugar.

The step that matters

Adding the boiling water one spoonful at a time. Adding the hot liquid slowly lets the egg and butter mixture warm gradually, which helps prevent it from curdling or separating into a grainy sauce.

Swap the nutmeg

How well each one fits the dish's main ingredients (sugar, butter, egg, wine):

  1. Cinnamonfits better
  2. Nutmegthe original
  3. Tarragonfits less well
  4. Thymefits less well

Fit is the average pairing score against sugar, butter, egg, wine. Candidates are from the same food group and used in at least 100 recipes.
