Charlotte Russe with Eggs

Ingredients

Directions

Prepare the cream

  1. Chill the cream thoroughly.

  2. Combine the sugar and vanilla with the cold cream and whip until stiff.

  3. Beat the egg whites until stiff and gently fold them into the whipped cream.

Prepare the cake

  1. Bake the sponge cake in a large sheet on a dripping pan.

  2. Cut an oval piece from the cake to fit the bottom of the charlotte pan.

  3. Cut even-sized parallelograms to fit the sides of the pan.

  4. If there's not enough cake for the bottom, use a paper cut to shape the bottom and fill with cream.

Assemble and serve

  1. Fill the dish with the whipped cream immediately and place it on ice.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cream
Whips into a light, airy foam that forms the bulk of the filling.
Egg whites
Whipped to foam and folded in, adding lightness and structure to the filling.
Sugar
Sweetens the cream and helps stabilise the whipped foam.
Sponge cake
Forms the outer lining of the charlotte, giving a light, absorbent structure to hold the cream.

The step that matters

Fold the egg whites gently into the whipped cream. Overmixing knocks air out of the whipped egg whites and cream, making the filling dense and runny instead of light and stable.
