To Make Filtered Coffee
Ingredients
Directions
Place the ground coffee in a cloth or strainer in the top of a coffee pot.
Pour boiling water over the coffee and let it filter slowly.
Once all the water has filtered through, heat the pot until the coffee is just bubbling.
Pour the coffee out and return it to the top of the pot to filter again.
Repeat this process two more times, then serve immediately.

What each ingredient does
- Finely ground coffee
- Provides the flavor and body of the brew; fine grounds extract more fully as water filters through.
- Boiling water
- Extracts the soluble flavor compounds from the coffee grounds as it passes through.
The step that matters
Heating the pot until the coffee is just bubbling. Overheating or letting the coffee boil can scorch it and make it taste bitter, while heating it only to a gentle bubble keeps the flavor smooth.
