What each ingredient does

Milk
Forms the liquid base and provides creaminess and body to the drink.
Cocoa
Supplies the chocolate flavour and deep colour of the drink.

The step that matters

Pouring the cocoa mixture into the boiling milk. Cocoa mixed with a little cold milk into a smooth paste first, then added while stirring, disperses evenly. Adding dry cocoa directly to hot milk tends to clump, leaving lumps in the drink.
