What each ingredient does

Pearl barley
Its starch and soluble compounds release into the water, giving the drink body and a mild grainy flavour.

The step that matters

Cook slowly for 2 hours. Simmering gently extracts flavour and starch from the barley without breaking the grains apart or making the liquid cloudy and bitter. A hard boil can scorch the bottom of the pot and sour the taste.

Swap the lemon

The recipe marks lemon as optional. How well each one fits the dish's main ingredients (barley, sugar):

  1. Vanillafits better
  2. Figfits better
  3. Raisinfits better
  4. Lemonthe original

Fit is the average pairing score against barley, sugar. Candidates are from the same food group and used in at least 100 recipes.
