What each ingredient does

Stale bread
Toasted bread gives the water its browned, toasty flavour and aroma.
Boiling water
Hot water pulls flavour and colour out of the toasted bread as it steeps.

The step that matters

Toast the bread evenly, not scorched. Even browning gives a clean, toasty flavour. Scorched bread adds bitter, burnt notes that carry into the water and cannot be removed by straining.
