What each ingredient does

Gelatine (in the method)
Sets the liquid into a firm, wobbly structure once it has dissolved and cooled.
Cold water
Hydrates the gelatine granules so they can swell and dissolve evenly.
Boiling water or milk
Melts the hydrated gelatine completely so it can be mixed into the liquid evenly.

The step that matters

Stirring until completely dissolved. Gelatine that is not fully dissolved leaves soft, grainy specks and uneven setting. Hot liquid melts the hydrated granules, and stirring spreads the heat so no undissolved pieces remain.
