Oyster Soup

Ingredients

Directions

Prepare the soup

  1. Place the oysters in a pot over low heat with their own liquor and simmer until the edges ruffle.

  2. In a double boiler, heat the milk until it reaches the scalding point.

  3. Optionally, add a blade of mace to the milk before scalding for extra flavor.

  4. Pour the hot milk over the oysters and let the soup stand for one minute.

Finish and serve

  1. Skim the soup well with a fine skimmer, season with salt and pepper, and serve immediately.

  2. For a richer soup, use equal quantities of milk and oysters.

What each ingredient does

Oysters
Provide the main flavor and tender texture of the soup when gently simmered.
Milk
Forms the creamy body of the soup and carries the oyster flavor.
Butter
Adds richness and a smooth mouthfeel to the finished soup.

The step that matters

Simmering the oysters until the edges ruffle. Oysters turn rubbery and tough when overcooked, so they should be heated only until the edges curl. Gentle low heat keeps them tender.
