Directions

Prepare

  1. Drain the oysters in a colander and season with salt and pepper.

  2. Prepare 1½ pints of dried bread crumbs and season them with a little salt and pepper.

  3. Thoroughly beat the eggs in a bowl.

Bread the oysters

  1. Roll each oyster in the bread crumbs, adding more crumbs as needed, and place them on a baking board sprinkled with crumbs.

  2. Dip each crumbed oyster into the beaten egg, then roll it in the bread crumbs again.

  3. Let the oysters stand for at least 1 hour before frying.

Fry and serve

  1. Heat the fat until it is very hot and blue smoke rises.

  2. Fry the oysters in batches for about 1½ minutes until golden brown, then drain on soft brown paper.

What each ingredient does

Oysters
Are the main food; their briny flesh is the centre of the dish.
Eggs
Bind the bread crumbs to the oysters so the coating adheres during frying.
Bread crumbs
Form a crisp, golden coating that browns and protects the oysters in hot fat.

The step that matters

Heating the fat until blue smoke rises. Fat that is not hot enough soaks into the breading, making the oysters greasy and pale. Very hot fat sets the crust quickly, so it browns and stays crisp.
