What each ingredient does

Oysters
Provide the main ingredient, cooking quickly to a tender, briny interior inside a browned coating.
Bread or cracker crumbs
Form a crisp, golden crust that browns in the hot fat and protects the oysters.
Clear fat or butter
Conducts heat to brown the crumb coating and adds richness and flavor.

The step that matters

Heating the fat until very hot before adding oysters. Oysters must go into very hot fat so the crumb coating sears and browns quickly. In cooler fat the coating absorbs grease and the oysters overcook and release liquid before browning.
