Meat Pie

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Prepare a pie crust and roll it out thickly to line a deep dish.

  2. Cut the beef into small pieces, about the size of an oyster, and slice thinly if possible.

  3. Dredge the beef pieces with flour and season with salt and pepper.

Assemble and bake

  1. Layer the beef in the dish, dotting each layer with small pieces of butter.

  2. Squeeze lemon juice over the meat.

  3. If you have leftover gravy from roast meat, add a few drops of Worcestershire sauce and pour it over the meat.

  4. If no gravy is available, add water to the meat until it reaches half its height.

  5. Cover the top with a crust, pinching the edges together.

  6. Bake for 45 minutes at 350°F (175°C).

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef
Provides the savoury meat filling that makes up most of the pie.
Flour
Dusting the meat helps thicken the juices as the pie bakes.
Butter
Melting pieces through the layers adds richness and moisture to the meat.
Lemon juice
Adds acidity that brightens the flavour of the rich meat.

The step that matters

Adding the liquid. Water or gravy must be added to the right level so the meat stays moist and the filling sets as it bakes without drying out or boiling over the crust.
