Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Salt pork
Provides the main meat and, once fried, the crisp texture and fat used for the gravy.
All-purpose flour
Coats the pork so it crisps, and thickens the gravy when cooked in the fat.
Milk
Forms the liquid base of the cream gravy, giving it body and a mild, creamy flavor.

The step that matters

Stirring flour into the fat and adding milk slowly. Cooking the flour in fat forms a roux that thickens the gravy. Adding the milk slowly while stirring keeps the mixture smooth instead of lumpy.
