Poached Eggs

Ingredients

Directions

  1. Break each egg into a saucer, one at a time.

  2. In a saucepan, bring water to a simmer and add salt.

  3. Gently drop each egg into the simmering water, cooking one at a time if the saucepan is small.

  4. Keep the water just below boiling while cooking.

  5. Use a small spoon to carefully splash water over the egg to whiten it.

  6. Cook until the white is set but the yolk is still visible.

  7. Remove the egg with a perforated ladle and trim the edges.

  8. Place the egg on a small piece of buttered toast.

  9. Top each egg with a bit of butter and sprinkle with salt and pepper.
