Griddle-cakes
Ingredients
Directions
Heat a soap-stone griddle for twice the time it takes to heat an iron griddle.
If using an iron griddle, rub it with a small piece of fat salt pork when hot enough to sizzle.
Alternatively, use a halved turnip to grease the griddle if you prefer less richness.
Pour a spoonful of batter onto the griddle; it should hiss upon contact.
Watch for bubbles on the surface; when they appear, it's time to turn the cakes.
Turn the griddle often to ensure even cooking by rotating each edge over the hottest part of the stove.
