Careme's Recipe for Puff-paste

Ingredients

Directions

  1. Place the flour on a clean surface and make a small hole in the center.

  2. Add the salt, egg yolks, and ice water into the hole.

  3. Gradually mix the flour with the liquid using your fingers, adding more water if necessary until the paste is firm.

  4. Knead the paste for a few minutes until it becomes soft and glossy.

  5. Ensure the liquid does not escape and avoid forming lumps.

  6. To test if the dough is properly worked, stretch it; if it springs back, it needs more mixing.

  7. If needed, roll out the paste and place walnut-sized pieces of butter on it, then work it until soft.
