Mince Meat

Ingredients

Directions

Prepare the meat

  1. Remove fat and skin from the beef, cover with boiling water, and simmer gently until tender.

  2. Let the meat cool in the cooking water, then chop it finely but not to a powder.

Prepare the fruit and suet

  1. Shred the suet and chop it finely; chop the apples coarsely.

Mix and store

  1. Mix all dry ingredients with the meat and suet, then add the juice and grated rind from the lemons and oranges.

  2. Stir everything well, pack the mixture into a stone jar, and pour over the brandy, sherry, and cider.

  3. Cover the jar tightly and store it in a cool place.

  4. Mince meat improves with keeping; make it at least two weeks before use.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lean beef
Provides the meaty body of the mincemeat once simmered and finely chopped.
Beef suet
Adds richness and fat that keeps the filling moist and soft.
Apples
Contribute moisture and tartness that balance the sweetness of the fruit and sugar.
Sugar
Sweetens the mixture and helps preserve it during storage.
Brandy
Adds alcohol that aids preservation and gives a warm, rich flavour.

The step that matters

Storing in a cool place and letting it mature. The mixture needs to be packed tightly and kept sealed and cool so the alcohol and sugar preserve it, while the flavours blend over at least two weeks.

Swap the mace

How well each one fits the dish's main ingredients (beef, apple, raisin, lemon, currant, sugar, cinnamon):
