Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sugar
Sweetens the ice and keeps it softer by lowering its freezing point.
Orange juice
Provides the main orange flavour and most of the liquid base.
Orange rind
Adds aromatic oils that give the ice a stronger citrus scent and taste.
Lemon juice
Adds acidity that brightens the orange flavour and balances the sugar.

The step that matters

Cool the syrup fully before adding the juices. Adding fresh juice to hot syrup can dull its bright flavour and aroma. A fully cold mixture also freezes more evenly, giving a smoother texture.
