Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lemons
Provides sharp acidity that balances the sweetness of the syrup.
Orange
Adds fruity juice that contributes sweetness, acidity and aroma.
Sugar
Sweetens the punch and, in the syrup, helps give the meringue body and stability.
Egg whites
Whipped to stiff peaks, they add foam and a light, airy texture.
Sherry
Adds wine flavor and aroma to the punch.
Jamaica rum
Adds strong aroma and flavor, and its alcohol keeps the mixture from freezing solid.

The step that matters

Slowly pour the hot syrup into the egg whites while beating. Pouring slowly while beating lets the hot syrup cook and stabilize the whites gradually. Pouring too fast or stopping the beater can deflate the foam or leave it lumpy.
