Why it works: Cream and sugar are a kitchen classic. They rank in the top 9% of all ingredient pairs, and cooks put them together in 43,450 recipes. Both carry 2,3-butanedione, which smells butter, sweet. The science ↓
Orange Bavarian Cream
Ingredients
Directions
Prepare the gelatine
Soak the gelatine in the cold water for 2 hours in a cool place.
After soaking, add the hot water to the gelatine, stirring well until completely dissolved.
Make the orange base
Grate the yellow rind from 1 orange into a bowl and squeeze the juice from 3 oranges into the same bowl.
Pour the dissolved gelatine into the bowl with the orange juice.
Strain this mixture into a tin basin and set it on ice or in a cool place until it begins to thicken.
Finish and mold
Whip the cream and place it in a cool place.
Gradually add the whipped cream, stirring thoroughly from the bottom of the pan.
To check thickness, take a spoonful of the mixture and pour it back; if it does not immediately sink, it is thick enough to mold.
Pour into a mold lined with sponge cake if desired, or use an unlined mold.

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Gelatine
- Sets the liquid into a firm, sliceable structure as it cools.
- Cream
- Adds richness and a light, airy texture when whipped and folded in.
- Oranges
- Provide the juice for flavour and acidity, plus rind for aroma.
- Sugar
- Sweetens the cream and balances the acidity of the orange juice.
The step that matters
Checking the thickness before molding. If the mixture is still too thin when the whipped cream is added, it will not hold its shape. The spoon test shows whether it has thickened enough to mold.
Swap the orange
How well each one fits the dish's main ingredients (cream, sugar):
- Vanillafits better
- Strawberryfits better
- Raspberryfits better
- Orangethe original
Fit is the average pairing score against cream, sugar. Candidates are from the same food group and used in at least 100 recipes.
