Finger Rolls

Ingredients

Directions

Make the dough

  1. Work the butter, sugar, salt, mace, and lemon flavor into the sponge.

  2. Add more flour to make a medium dough.

  3. Let the dough rise once, then work it over.

Shape the rolls

  1. Break off pieces weighing about 1 ounce and mold them into rounds.

  2. Let the rounds rest for a few minutes.

  3. Form each round into fingers about 5 inches long.

  4. Place on pans so they do not touch.

Prove and bake

  1. Let them prove for about half the time, then wash with egg wash.

  2. Set back to finish proving and bake until golden brown.

The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sponge
Forms the base of the dough that the other ingredients are worked into.
Butter
Adds fat, which tenderizes the crumb and gives a richer texture.
Sugar
Adds sweetness and helps the crust brown during baking.
Eggs
Egg wash gives the rolls a glossy, deeply browned surface.

The step that matters

Finish proving before baking. Proving only half the time before the egg wash and then finishing after it lets the dough expand fully. Under-proved rolls bake dense, while over-proved ones may collapse or lose their shape.

Swap the mace

How well each one fits the dish's main ingredients (butter, sugar, lemon, egg):

  1. Cinnamonfits better
  2. Nutmegfits better
  3. Parsleyfits better
  4. Macethe original

Fit is the average pairing score against butter, sugar, lemon, egg. Candidates are from the same food group and used in at least 100 recipes.
