Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Set the custard into a firm, sliceable pudding as they cook.
Pearl tapioca
Thickens the milk as it softens and gives the pudding its chewy body.
Milk
Forms the liquid base that the tapioca swells in and the eggs set.
Sugar
Adds sweetness and balances the savory richness of the eggs and butter.
Butter
Adds richness and a smoother mouthfeel to the custard.

The step that matters

Baking until the custard is firm. Eggs set when heated gently; bake too long or too hot and they curdle and turn grainy, while underbaking leaves the custard runny. The knife test shows when the proteins have set.
