What each ingredient does

Corn
Provides the main body and sweet flavour of the soup.
Milk
Adds creaminess and softens the soup's texture.
Eggs
Thicken the soup gently as they set in the hot liquid.
Butter
Adds richness and a smooth, rounded mouthfeel.

The step that matters

Stirring in the eggs off the heat. Beaten eggs can curdle or scramble if the soup is too hot. Removing the pan from the heat before stirring them in lets them thicken the soup smoothly instead of setting into lumps.
