What each ingredient does

Fish
Forms the main body of the mixture and gives the balls their flavour.
Mashed potatoes
Bind the chopped fish and add softness to the mixture.
Butter or rich cream
Adds moisture and richness so the mixture stays tender.
Flour
Forms a dry coating that helps the outside brown during frying.

The step that matters

Heating the fish gently without boiling. Boiling toughens fish proteins and dries them out, making the mixture coarse and less tender. Gentle heat cooks the fish evenly while keeping it moist.
