Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Forms the main body of the loaf and gives it its meaty texture.
Salt pork
Adds fat, which keeps the loaf moist as it bakes.
Eggs
Bind the meat together so the loaf holds its shape when sliced.
Powdered cracker
Absorbs juices and helps the loaf hold together while baking.

The step that matters

Knead the mixture well until combined. Thorough kneading spreads the eggs and fat evenly through the meat, so the loaf binds firmly and stays moist rather than crumbling or drying in patches.

Swap the clove

The recipe marks clove as optional. How well each one fits the dish's main ingredients (veal, pork, egg, pepper):

  1. Sagefits better
  2. Parsleyfits better
  3. Marjoramfits better
  4. Clovethe original

Fit is the average pairing score against veal, pork, egg, pepper. Candidates are from the same food group and used in at least 100 recipes.
