What each ingredient does

Shin of beef
Releases gelatin and flavor into the broth during long simmering, giving body and richness.
Knuckle of veal
Its bones and marrow add gelatin and depth, thickening the broth as it simmers.
Carrots
Add natural sweetness and color to the soup.
Cauliflower
Adds mild flavor and a tender texture after a short cook.

The step that matters

Removing the scum after the boil. Scum is coagulated protein and impurities that rise as the broth heats. Skimming it early keeps the broth clear and clean-tasting rather than cloudy or bitter.
