Eoast Veal

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Make a stuffing similar to that used for roast turkey and fill the cavity of the veal loin with it, securing it tightly.

  3. Rub the veal with coarse sea salt, black pepper, and a little butter.

  4. Place the veal in a pan with a little water.

Roast and serve

  1. Roast for about 2 hours, basting frequently until thoroughly cooked.

  2. Remove the threads before serving.

  3. Thicken the gravy with a little flour.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal loin
Forms the main body of the roast, providing the meat that is cooked and served.
Butter
Adds fat and richness to the surface, helping it brown and taste savoury.
Flour
Thickens the pan juices into a gravy by binding with the liquid as it heats.

The step that matters

Basting frequently during the roast. Regular basting moistens the surface as it cooks, helping prevent the lean meat from drying out before the centre is fully cooked.
