Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the stuffing so it holds together during cooking.
Butter
Enriches the sauce and, with flour, thickens it smoothly.
Flour
Thickens the sauce when cooked with butter.
Fat bacon
Adds fat and savoury flavour to the stuffing and moisture to the pigeons.
Grated bread
Absorbs moisture and gives the stuffing a light, tender body.

The step that matters

Fry the pigeons until brown. Browning the lardered breasts builds savoury flavour through the Maillard reaction before stewing. Pale breasts would taste flatter in the finished sauce.
