Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 400°F (200°C).

  2. If using young pigeons, dress them and let them rest for 12 hours before roasting.

  3. Stuff each cleaned pigeon with bread crumbs, butter, salt, nutmeg, and oysters.

  4. Truss the wings over the back and place a small piece of butter dipped in cayenne inside each bird.

Roast and serve

  1. Baste the pigeons with melted butter and roast for 30 minutes.

  2. Baste constantly with butter while roasting.

  3. Serve with brown gravy and garnish with young watercress.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Pigeons
Provide the lean meat that is the main substance of the pie.
Bread crumbs
Absorb juices and fat from the stuffing, keeping the filling moist and lightly textured.
Butter
Adds richness and moisture, and promotes browning on the outside of the birds.
Oysters
Add a briny, savoury flavour that enriches the stuffing.

The step that matters

Basting constantly while roasting. Lean birds dry out easily in dry oven heat. Regular basting with melted butter keeps the surface moist and helps it brown evenly.

Swap the nutmeg

How well each one fits the dish's main ingredients (bread, butter, oyster, pepper, watercress):

  1. Capersfits better
  2. Parsleyfits better
  3. Tarragonfits about as well
  4. Nutmegthe original

Fit is the average pairing score against bread, butter, oyster, pepper, watercress. Candidates are from the same food group and used in at least 100 recipes.
