What each ingredient does

Turkey
Forms the main body of the dish, cooked slowly in simmering liquid until tender.
Oysters
Add a briny, savory flavor to both the stuffing and the sauce.
Bread crumbs
Absorb liquid and bind the stuffing so it holds together inside the bird.
Butter
Adds richness and fat to the stuffing and the sauce.
Flour
Thickens the sauce as it heats, giving it body.

The step that matters

Thickening the sauce after adding the flour mixture. Flour needs to be whisked smoothly into cold milk first and then heated so starch can swell and thicken. Adding it dry or lumpy leaves clumps and a thin, uneven sauce.

Swap the thyme

How well each one fits the dish's main ingredients (turkey, oyster, bread, butter, pepper, milk, sauce):

  1. Nutmegfits about as well
  2. Parsleyfits about as well
  3. Sagefits about as well
  4. Thymethe original
