Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the dough

  1. Preheat the oven to 400°F (200°C).

  2. Rub the baking powder into the graham flour.

  3. Add the cream and a little salt, then mix in the milk.

Shape and bake

  1. Roll the dough as thin as soda crackers.

  2. Cut into desired shapes.

  3. Bake until golden, then leave to dry near the stove for a few hours.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Graham flour
Forms the bulk of the dough and gives the crackers their structure and nutty flavour.
Thick sweet cream or butter
Adds fat, which tenderises the dough and contributes to a crisp, rich texture.
Sweet milk
Hydrates the flour so the dough comes together and can be rolled out.
Baking powder
Releases gas that lifts the dough slightly, giving a lighter crumb.

The step that matters

Rolling the dough thin. Thin dough dries and crisps evenly in the oven. Thick pieces stay soft in the centre and may not turn crisp when left to dry.
