Why it works: Radish and horseradish share more aroma than cooks usually use. They rank in the top 1% of all ingredient pairs, and cooks put them together in 38 recipes. Both carry coumarin, which smells sweet, hay. The science ↓

Radish-pod Pickles

Ingredients

Directions

  1. Gather young and tender radish pods and soak them in brine overnight.

  2. Boil the brine and pour it over the pods in jars, covering them tightly.

  3. When the brine is cold, repeat the process until the pods are green.

  4. Drain the pods and pour boiling hot vinegar over them, adding mace, ginger, long peppers, and horseradish.

  5. When the mixture is nearly cold, pour off the vinegar, boil it again, and pour it over the pods.

  6. Once cold, seal the jars and store them away.
