Ingredients

Directions

The book says “a very hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 400°F (200°C).

  2. Remove the gills from the oysters.

  3. Butter four individual baking dishes.

  4. Cover the bottom of each dish with bread crumbs.

Assemble and bake

  1. Place 6 oysters in each dish, dust with salt and pepper, and add a small piece of butter on top.

  2. Cover with more bread crumbs and drizzle 1 tablespoon of milk over each.

  3. Bake for 10 minutes.

What each ingredient does

Oysters
Provide the main flavor and a tender, briny filling that cooks quickly.
Bread crumbs
Form the body of the dish and soak up juices so the filling holds together.
Butter
Adds richness and helps the top brown lightly as it bakes.
Milk
Adds moisture and softens the crumbs into a creamy, scoopable texture.

The step that matters

Bake for 10 minutes. Oysters firm up and shrink quickly under heat. Even a few extra minutes can make them tough and dry, so watch them closely as they bake.
