What each ingredient does

Eggs
Bind the dough and, when beaten and brushed on, add a glossy finish that helps browning.
Flour
Provides the structure that holds the dough together once it is rolled and baked.
Powdered sugar
Adds sweetness and a fine texture that dissolves easily into the dough.
Sliced almonds
Add crunch and a nutty flavor that contrasts with the soft dough.
Candied orange peel
Adds bright citrus flavor and chewy pieces throughout the dough.

The step that matters

Letting the squares stand overnight. Resting the cut dough lets it dry slightly at the surface, which helps the shapes keep their form and the egg wash adhere evenly before baking.
