What each ingredient does

Potatoes
Form the bulk of the dumplings and give them a soft, starchy body.
Egg yolks
Add richness and bind the grated potato into a cohesive dough.
Egg whites
Fold in air to lighten the dough and help it hold a softer texture.
Flour
Absorbs moisture and helps the dough hold its shape when cooked.
White bread
Adds body and a toasted, buttery flavor when browned and cooled into the dough.

The step that matters

Testing a small dumpling before cooking the rest. The dough's moisture and binding vary with the potatoes, so a test dumpling shows whether it will hold together in boiling water. If it breaks apart, the extra egg or flour adjustment prevents the whole batch from falling apart while cooking.
