Sift sugar and flour together 5 times.
Beat egg whites until partly stiff, then add cream of tartar and continue beating until stiff.
Slowly add sugar to the egg whites, then mix in the beaten yolks.
Beat the mixture well, then add flour and flavoring.
Bake in an ungreased pan at 300°F (150°C) for 35 to 40 minutes.
