Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg white
Whipped to a stiff foam, it gives the candy its light, airy structure.
Brown sugar
Adds sweetness and molasses flavor, and helps the mixture bind and brown while baking.
Roasted peanuts
Provide the main nutty bulk and texture of the candy.

The step that matters

Beat the egg white until stiff. Egg white must be whipped to stiff peaks so it can trap air and hold the sugar and nuts; under-beaten whites leave a dense, flat candy.

Swap the peanut

How well each one fits the dish's main ingredients (egg, sugar, vanilla, meat):

  1. Almondfits better
  2. Chestnutfits better
  3. Pecansfits better
  4. Peanutthe original
